Dancing Wind Berry Farms

Blueberries are one of the easiest fruit to prepare and serve. No pits, cutting or coring. Just that wonderful taste that comes from nature.
Today I am picking at my friends farm. What a fun time. I picked 15 pounds in four hours. The temperature was in the 90's, but who cares when you can pick such a delightful fruit.

Blueberry waffles

2 eggs, separated

1- 1/2 cups milk

1/2 cup melted butter

2 cups flour

2 tsp. baking powder

1/2 tsp. salt

1 tab. sugar

1 cup of fresh or frozen blueberries

In a small mixing bowl, beat egg whites until stiff; set aside. Beat egg yolks: add milk and melted butter. Mix dry ingredients together; add egg yolk mixture and mix until smooth and fold in blueberries. Gently fold in beaten egg whites. Bake in a hot waffle iron. Makes 6 blueberry waffles.
