An indigenous vegetable native to North America, pumpkins not only play a roll as jack o lanterns on Halloween and fillings for Thanksgiving pies, they also provide a wide range of healthy benefits, making them a perfect food to incorporate into your daily diet. We have been having pumpkin every week. I bake a pie without the crust and serve it in a wedge along with our other vegetables, and it is delicious. Pumpkin is loaded with fiber, antoxidants, vitamins, minerals and is low in calories. Pumpkin seeds have a nutty flavor. Quite tasty I might add. Add pumpkin to your plate on a weekly basis. It's not just for Halloween.
