Real Food Made Simple: Real Fast

Sauteed vegetables are one of the easiest ways to stop cravings for traditional comfort food while also getting in several veggies at the same time. My favorite combination is mushrooms, lentils and carrots cooked in a vegetable broth. I try to keep some of this made in the fridge and just reheat on the stove top. Who doesn't like a lovely salad topped with all of your favorite fixings? Salads are so versatile and can be sweet, salty or a combination of both. Vegetable soup, with or without meat, is a great way to have a filling one pot meal. During the winter months we have soup two to three times a week. Baked fish or chicken can be a healthy, fast way to get some lean protein in minutes. Soon the lettuce from the garden will be ready, along with the other vegetables I have in mind for planting this spring and summer. Take advantage of container planting also. Get those tomatoes in a planter and watch them grow. Happy Gardening!
