Alfredo Florentine Lasagna

1 container(15oz.) ricotta cheese
1 egg
1 pkg(10oz.) leaf spinach, thawed and squeezed dry
1/2 tsp. salt
1/4 tsp. pepper
1 jar of Alfredo sauce
12 lasagna noodles cooked and drained 
1 lb. mozzarella cheese

Preheat oven to 350 degrees. Combine first 5 ingredients in medium bowl; set aside. Spread 1/4 cup sauce in baking dish. Layer on noodles and 1/2 of the ricotta mixture, 1/4 cup sauce and 1/3 of the cheese; repeat layers, ending with noodles. Top with remaining sauce.

Cover with aluminum foil and bake 40 minutes. Top with remaining cheese. Bake an additional 10 minutes. Makes 8 servings. This dish is a great alternative to a meat lasagna.
